Identification of parameters influenced glucoamylase inactivation
The paper deals with glucoamylase inactivation at 60 degreesC and in moderate mixing conditions (270 rpm). It was stated that elevated temperature is the main parameter of inactivation, slightly increased by mixing. Glucose in concentration of 2.5% appeared to be very good activity stabilisers while effect of starch on inactivation varied with the substrate concentration.
