Effect of tissue structure on rehydration properties of dried plant material
Effect of tissue structure on rehydration properties of convective dried apple and potato was investigated in this work. It was evaluated comparing course of drying and rehydration of plant tissues and their chemical models. It was found that models dried faster and during rehydration imbibed less water, leaked more solubles and returned in smaller degree to initial volume.
