Chitin deacetylase can be an useful tool in enzymatic deacetylation of chitin and chitosan. The aim of the present work was to investigate the kinetics of enzymatic deacetylation of chitosan. The preliminary results suggest that the process is consistent with multisitie cooperation, where chitin deacetylase is composed probably of two subunits.
