Influence of drying on plant tissue structure
Influence of convective drying and freeze-drying on plant tissue structure was investigated. It was found that convective drying was more harmful to apple tissue than to blanched potato structure. On the other hand freeze-drying was more detrimental to potato structure than to apple tissue. However, both apple and potato tissues were injured more by freeze-drying than by convective drying.
