Native potato starch was gelatinized, oxidized with H2O2, dried and studied for presence of CO and COOH groups, water absorption, water soly. and structural changes. The oxidn. resulted in increasing the content of CO and COOH groups, esterification of COOH groups, degrdn. of polymer chains, decreasing their crystallinity and increasing soly.
