Evaluation of drying models of apple (var. Ligol) dried in a fluidized bed dryer
Three new drying models were formulated. The developed models are various modifications of the Page model. The models were used to describe the drying behaviour of apple (var. Ligol) dried in a fluidized bed dryer. The suitability of new models to describe the drying characteristics were compared to the accuracy of sixteen models available from the literature. The accuracies of the models were measured using the correlation coefficient (R), root mean square error (RMSE), and reduced chi-square (chi(2)). Three new developed models described the drying characteristics of apple cubes satisfactorily (R> 0.997). The Page model and one of the empirical models formulated by the authors of this study can be considered as the most appropriate (R > 0.9977, RMSE = 0.0094-0.0167, chi(2) = 0.0001-0.0002). The effect of drying air temperature on the drying models parameters were also determined. The shrinkage of apple cubes during drying was measured to assess the changes in quality of dried apples.
