Modelling of a drum freezer. Application to the freezing of mashed broccoli
Frozen mashed vegetables are used in the industry to produce frozen pebbles. This paper describes the development of a continuous drum freezer which is used to freeze mashed vegetables. Mashed vegetables were applied onto a rotating drum. A calcium chloride solution cooled by a refrigeration unit was used as a cooling fluid and circulated in the drum. Experiments were carried out with mashed broccoli and the influences of working parameters of the apparatus were tested with a central composite experimental design. The best freezing result was obtained with a small thickness of the frozen flake and a high rotating speed. A mathematical model was developed to simulate the freezing process which showed good agreement with experimental results.
