Condensates from the strawberry jam production as a source of aromatic compounds
The condensate fractions were studied for sugar content, pH and chem. compn. of volatile compds. Sixteen aromas, inter alia gamma-decalactone, were identified. The condensate was recommended as an additive to fruit foods.
