Chemical consequences of the origin and storage of honey
The content of 5-hydroxymethyl-2-furfural (HMF) was detd. in 10 natural honeys by using the reflectometric method with test strips. Honeys collected from Polish apiaries in 2020 showed a low HMF content, not exceeding 5.38 mg/kg while the value increased to 89 mg/kg in honeys collected in 2017. The HMF content in com. honeys from EU and non-EU collected in 2017 was 97-280 mg/kg. The content of HMF in honey may be a good indicator of its quality.
