Effect of Low Kilning Temperatures on Diastase and Cellulase Development of Nigerian Malted Sorghum (Sorghum-Bicolor)
Lowering the kilning temperatures of a malting sorghum variety (Sorghum bicolor) resulted in a significant increase in the level of diastase and cellulase activities of the malt. A 7.7, 8.7 and 12.4% decrease in diastase activities and 4.1, 7.3 and 12.6% decrease in cellulase activities were recorded when the kilning temperatures were raised to 35, 40 and 45 degrees C, respectively when compared with the values of these enzymes obtained for the unkilned malt.
