Glucose oxidase (GOD) was encapsulated within calcium alginate gel capsules. The effects of gelation conditions on capsule characteristics such as thickness. percentage of enzyme leakage and encapsulation efficiency were studied and the optimal conditions for GOD encapsulation obtained.
