THE EFFECT OF FROST ON THE STARCH YIELD FROM KUDZU (PUERARIA-LOBATA) ROOTS OF VARIOUS AGES GROWN IN NORTHERN ALABAMA
The aim of this investigation was to determine the best time for harvesting kudzu roots of various ages to maximize the extractible starch. The analyses were made on raw material collected over a three-month period, October-December 1991, which encompassed the first frost of the season. It was established that the highest starch content was found in the three- to four-year-old roots, collected in December.
