액침배양을 통한 동물사료용 활성효모의 생산 최적화
Optimization of Production of S. cerevisiae for Animal Feed at Submerged Culture

최근 동물사료용 효모배양물은 항생제의 첨가에 따른 내성균 문제와 가축의 조직 내 잔류현상 문제를 해결하기 위하여 생균제와 함께 항생제를 대체하기 위한 이용이 크게 증가되고 있는 추세이며, 이 효모배양물의 급여는 장내 미생물의 균형을 유지하고 병원성 대장균 증식을 억제하며, 면역반응 증진 및 콜레스테롤 수준 감소 등의 효과를 볼 수 있다. 본 연구에서는 활성효모의 대량생산을 위하여 사료첨가제에 사용되고 있는 S. cerevisiae를 이용하여 액침배양조건을 최적화시켜 활성효모의 균체수를 증가시키고자 하였다.
In recent years, utilization of yeast and live bacterial culture for animal feed has increased. Supplementation of yeast culture beneficially affects the livestock by improvement of intestinal microbial balance, promotion of immune reaction and diminution of cholesterol level, etc. Yeast cells have contributed to the nutritional value of fermented foods, like bread and beers. Yeasts are good sources of protein or amino acids. Approximately 40 % of the weight of dried yeast consists of protein. In this study, the optimal cultivation conditions of the submerged culture for the cell production of S. cerevisiae were investigated. In the submerged culture, the optimal conditions were pH 4.5, 36 ℃, 6.0 % high fructose syrup and 2.0 % corn steep liquor. Under these optimal conditions, S. cerevisiae over 3.5 × 108 cell per mL was obtained as a final product.
