Investigation of the stability of microemulsions containing fucoxanthin |

The aim of this study was to prepare and evaluate the stability of various concentrations of fucoxanthin in oil-in-water microenulsions (ME) using medium chain triglyceride as oil phase, Tween 80 as surfactant and polyethylene glycol 400 as co-surfactant. The formulations were stored at 4 ℃ and characterized by droplet size and fucoxanthin contents for 4 weeks. The droplet size of ME was less than 100 nm. It was stable during the experiment time when the oil content was 2%. As the oil content increased to 3 % and 4 %, the sizes of the droplet increased with time and the ME was translucent from the second week. As the oil content increased to 5%, phase separation took place at the last week. Once the concentration of fucoxanthin was kept below 0.25%, about 95% of fucoxanthin was maintained for 4 weeks while no phase separation taking place soon after the preparation. |
