제목 Effect of β-glucanase on β-glucan in yeast cell wall
초록 β-glucan is a polymeric material composed of glucose. Especially the β-glucan obtained from yeast cell wall is known to be one of the biologically active compounds that have skin protection capability. The composition and structure of yeast cell wall vary with species and they are affected by the composition of media and the culture conditions. To investigate the β-glucan content of various yeast species, 27 yeast strains obtained from KCTC and KCCM were treated with Glucanex® 200G that contained β-glucanase. Saccharomyces cerevisiae was used as a model strain and the effects of the change in media composition and culture conditions on β-glucan content were examined using batch and continuous cultivation. The β-glucan content of yeast cell wall was estimated by measuring the sensitivity of yeast cell wall after β-glucanase treatment. The change in β-glucan content was not much during cell growth when yeasts were grown on complex media. However, the change was marked when defined media was used for cell growth. When continuous cultivation was carried out, the sensitivity of cell to β-glucanase increased with dilution rate.
