제목 Efficient enzyme-catalyzed reaction with poorly water-soluble substrate using bicontinuous interfacially jammed emulsion gel (BIJEL)
초록 Although enzymes are bio-catalysts which facilitate conversion of various substrates into desired products with high specificity under mild condition, its effectiveness as a catalyst for poorly water-soluble substrate is substantially reduced. In this study, to expedite the enzymatic reaction, we utilized bicontinuous interfacially jammed emulsion gel (bijel) which has enormous interfacial area between two immiscible liquids. Using tributyrin hydrolysis as a model reaction, we show that the interfacial area between two immiscible liquids of bijel is a crucial factor for the efficient enzymatic reaction involving poorly water-soluble substrate. Moreover, bijel system showed four-fold increase in reaction rate compared to that of biphasic system which is the most common method. The outcomes indicate that bijel could be a platform material to accelerate the conversion of various hydrophobic materials.
