Catechol derivatives are useful moieties that can be found in mussel proteins and phytocehmicals such phytoalexin, ortho-hydroxylated flavones/isoflavones. Isoflavones and flavones produced via the general phenylpropionic pathway in higher plants are known as good nutritious sources for anti-aging and a lower incidence of cancers. Especially, hydroxylated isoflavones and flavones have been reported to be more effective antioxidants thus appropriate for anti-aging treatments or cancer medications. Tyrosine residues in macromolecules can be hydroxylated to form dopa which is found in mussel proteins. And the application of dopa residues of protein matrices is broadly introduced in various fields of technologies. For the fast, effective, and regioselective hydroxylation of monophenolic compounds, tyrosinase has been utilized. The amount of side products, melanin, of tyrosinase was minimized with the optimized reaction condition. As a result the conversion yield of producing catechol derivatives was significantly improved. |
