Chitin nanocrystals were extensively used in cosmetics, pharmaceutical, functional food due to their biodegradability. The capacity of chitin nanocrystals (CNC) was stabilization of foam by adsorption in air-water surface with nonionic surfactants, tween 20. The carboxylation of CNC by TEMPO (2,2,6,6-tetramethylpiperidin-1-yloxidanyl) radical oxidation reaction interacted with nonionic surfactants, which enhanced foamability and foam stability by observing foam volume velocity, bubble size and max foam volume. The size of CNC varied with the amount of sodium hypochlorite from 100nm to 1㎛. The 100nm of synthesized CNC was the most appropriate size for adsorbing on air-water surface . |
