1H-NMR spectroscopic study on the autoxidation of soybean oil |
| 초록 |
The reactivity of each C-H bond of the soybean oil in the autoxidation was investigated by means of proton NMR-spectroscophy. The reactivity decreased roughly as following order: allylic proton ≥ bisallyic proton ＞ CH2O proton ＞ CH2 proton ＞ olefinic proton. The inhibitor effect of a phenol and an amine was compared with pure soybean oxidation. The reaction products were identified after transesterification by means of GC-Mass spectrometer. |
