Hydroxycinnamic acid has been investigated as strong antioxidants and applied to food and cosmetic industries. We synthesized antioxidative peptide conjugates of hydroxycinnamic acid such as ferulic acid, caffeic acid, and sinapic acid by solid-phase peptide synthesis (SPPS) method. To measure their potential antioxidant properties, 2,2-diphenyl-1-picrylhydrazyl radical (DPPH) scavenging test and lipid autoxidation inhibition test were conducted. When antioxidative peptides such as glutathione and carnosine were conjugated to hydroxycinnamic acid, they showed enhanced antioxidant activity. Caffeoyl-peptide showed the highest free radical scavenging activity in DPPH test. Ferulic acid and sinapic acid-peptide conjugates showed excellent antioxidative activity in emulsified linoleic acid autioxidation system. |
