Preparation of Carrageenan Microparticles as a Enzyme Immobilization Support |

Carrageenans are a family of linear sulfated polysaccharides that are extracted from red seaweeds. They are widely used in the food industry, for their gelling, thickening and stabilizing properties. Enzymes have several advantages over conventional inorganic cataIysts. However, some drawbacks limit their use in large industrial scales. The idea of immobilization of enzyme on insoluble supports provides a wide challenge to use the enzymatic reaction in industrial scale. The immobilized enzyme can be reused throughout several reactions and easily separated from the product. Moreover, the stability of enzyme is also increased after immobilization. In this study, we successfully prepared carrageenan microparticles using electrospraying method and characterized their properties. After that, we immobilized enzyme on the carrageenan microparticles and evaluated enzyme loading efficiency and activity. |
