Effect of sugar alcohols on reverse self-assembly of lecithin. |

Lecithin can form reverse spherical micelles in a variety of nonpolar solvents by the self-assembly of molecules. When certain additives such as water or bile salts are added to lecithin solution, reverse spherical micelles are transformed into reverse cylindrical micelles. The hydrogen bonds between the additives and phosphate groups in lecithin play a key role for the formation of the reverse cylindrical micelles. We replaced those additives with sugar alcohols such as D-sorbitol. As increasing the number of -OH groups in the sugar alcohols, the length of the reverse cylindrical micelles increases, resulting in the increase in the viscosity of the solutions. The lengths and radii of reverse cylindrical micelles were measured by small-angle-X-ray scattering (SAXS) and the rheological properties were studied by steady-shear and dynamic rheology. Fourier-transform infrared (FT-IR) was used to investigate the interactions such hydrogen bonds between lecithin and sugar alcohols. |
