제목 Diverse reverse self-assembed structures of amphiphilic molecules in organic solvents and their applications
초록 Amphiphilic molecules self-assemble into characteristic structures such as micelles and vesicles in water and oils. Compared to “normal” self-assembled structures in water, “reverse” self-assembled structures in oils are much less known due to difficulty in creating them. Despite the limited knowledge of the reverse self-assembled structures, they have been interested in many researchers because of their diverse applications in organogels and controlled release. Here, we present a simple and reliable method to create the reverse micelles and vesicles using mixtures of lecithin and additives. By controlling the molar ratio of lecithin and additives, diverse reverse self-assembled structures such as cylindrical micelles and vesicles were formed. In addition, we show potential applications of those structures in food and encapsulation of solutes.
