제목 Stabilization of spirulina with a non-aqueous system
초록 Spirulina, a blue-green algae known for its rich nutrient resource, is used as a protein supplement a number of people worldwide. Because Spirulina has 62% amino acid content and a soft cell wall made of sugars and protein, it was difficult to be stabilized in aqueous system. We confirmed that it is possible to form glycerin-in-oil emulsion with silicone elastomer bland and polyglyceryl emulsifier and maintain its long-term stability. Even though spirulina is incorporated in formula, its stability such as color change, phase separation could be remarkably improved in the comparison to the conventional emulsion containing water.
