Emulsions are widely used in cosmetics and pharmaceutics for encapsulation, solubilization, and controlled delivery system. On the other hand, biopolymers such as polysaccharides and proteins are currently used in order to stabilize emulsions instead of synthetic surfactants. In this study, we investigated the morphology and stability of hydrogel particles and oil-in-water (O/W) emulsions based on polysaccharide, protein, and glycoprotein. These hydrogel particles and biopolymer-stabilized O/W emulsions have a great potential in the cosmetic and pharmaceutical field for encapsulation, stabilization, targeted release of active ingredients. |
