Chitosan, a natural polymer having biological activities has been widely used as various pharmaceutical materials, and a functional food material. It is necessary to fraction of chitosan molecular weight(MW) because of its broad MW. In this study, the chitosan with broad MW has been fractioned by ultrafiltration method and continuous plate membrane method. The physicochemical properties of fractioned chitosans were examined by 1H NMR, FT-IR, TGA, GPC-MALLS. Their biological activities were confirmed by cell cytotoxicity and antibiotic activity. The fractioned chitosans have been narrow MW and high purity. The cytotoxicity result revealed that any chitosan has no cell cytotoxicity on the Caco-2 cell lines. The chitosan having a molecular weight of 10 kDa showed highly antibacterial activity against bacteria strains.
