The objective of this study was to investigate the effects on storage in different acidic solutions of β-chitosan. The β-chitosan were subjected to acidic degradation by measuring the viscosity, average molecular weight, degree of deacetylation, refraction index of chitosan. The average molecular weight of chitosan were calculated by Mark-Houwink equation, which shows relationship between intrinsic viscosity and molecular weight. The viscosity and average molecular weight of β-chitosan were observed with increasing storage time. |
