Preparation of L-ascorbic acid entrapped BGsome and its stabilization effect |
| 초록 |
Entrapment of L-ascorbic acid into BGsome, which are made by hydration of butylene glycol(BG)-dissolved lecithin with aqueous solution, was attempted in order to improve its stability against oxidation. Acidity of ascorbic acid solution was reduced by entrapment into BGsome. The effect of ascorbic acid solution concentration on the BGsome droplet size and zeta potential of was investigated. The stabilization effect by BGsome was evaluated by HPLC assay and DPPH method. |
