The root of the soybean sprout (RSS) has been attracted attention due to the possible application for the dietary fiber. The main components of the soybean sprout are water, protein, sugar, lipid, ash and fiber with the weight percent of 90.2, 4.2, 2.9, 1.0, 0.8 and 0.5 %, respectively. Since RSS mainly composed with cellulose fiber, nonoporous structures are expected and obtained the structure using high resolution field emission scanning electron microscope (HR-FESEM). The diameter and length of the pores are approximately 5 nm and 20 nm, respectively. After heat treatment, Although the pore diameter is approximately the same, the length of the pores becomes longer due to the connection of each pores with respect to the pores of the untreated RSS. The surface becomes extremely crinkle after heat treatment, which increases the surface area drastically. The pore diameter and length become approximately 20 nm and bigger than 100 nm, respectively, after extraction. |
