Biotransformation of Daidzein to 7,6,4’-trihydroxyisoflavone and 7,3',4’-trihydroxyisoflavone. |
초록 |
The soy isoflavones are naturally occurring compounds which exhibit estrogen-like function . Diadzein which showed the highest content in Doenjang was hydroxylated to form mono-hydroxylated isoflavones. Using bacterial species screened from Doenjang, Daidzein was transformed to 7,6,4’-trihydroxyisoflavone. And also using Nocardia farcinica, Daidzein was transformed to 7,3’,4’-trihydroxyisoflavone. When hydroxylated, it was reported that hydroxylated isoflavones show higher anti-bacterial, anti-oxidative and anti-cancer activity. The product was identified using HPLC, GC-MS and MALDI-TOF. |
