When colloidal particles are used to stabilize emulsion system, it is called ‘Pickering emulsion’. Emulsions are utilized variously, such as food, cosmetics, and adhesive, and controlling the rheological properties of emulsions is crucial to make better product. The rheological properties of Pickering emulsion system can be varying depend on the ratio of internal phase and the concentration of particles. Many studies have been conducted about the rheological properties of the fluid system that colloidal particles are dispersed. However, there is no clear explanation of the relationship between rheological properties of Pickering emulsions and colloidal particles adsorbed on their interfaces. In this study, elastic behavior of Pickering emulsions stabilized with TiO2 colloidal particles were measured and compared with TiO2 concentration. And then established the model that relates the rheological behavior of emulsions with elasticity of particle layer on interface. Finally, the effect of elasticity of particle layer, wich were used to stabilize emulsion, to the elasticity of emulsion is figured out. |
