Mechanical Shear can Accelerate the Gelation of Bovine Serum Albumin with or without SDS |

In contrast to conventional knowledge, we show that shear strain can induce the gelation of globular proteins such as BSA. Shear strain produces competing effects of network disruption on one side and acceleration of gelation or network connectivity on the other side. The dominating effect was determined by the variation of complex modulus with time using rheological properties measurement method. Gelation time was found to decrease initially with increase in strain amplitude from 0.1% - 5%, after which the gelation time increased rapidly with further increase in strain amplitude from 10% - 50%. We identified a region of optimum strain amplitude for BSA gelation. At high value of shear strain, the kinetics of gelation was delayed due to shear strain not favouring network connectivity by accelerating molecular motion. |
