Preparation of Catechin-incorporated Small Anchovy |
| 초록 |
Small anchovy are green fish with blue reflections due to a silver longitudinal stripe that runs from the base of caudal fin. Catechin is epimers, with (-)-epicatechin and (+)-catechin being the most common optical isomers found in nature. The health benefits of catechins have been studied extensively in humans and in animal models. This study, catechin loaded SA were prepared by ultrasonic process and investigated by BACcT, SPC(Standard Plate Culture), SEM(scanning electron microscopy) and Spreading method measurement. |
