Crystallization is widely used in various industries such as pharmaceutical, food and material industries. If there is another soluble material mixed with target material during crystallization, the crystallization process could be affected by it. In the previous researches, it is widely known that polyphenols with hydroxyl group like tannic acid have hydrogen bonding with polymer like polyvinylpyrrolidone(PVP) or polyethylene glycol(PEG), resulting in gelation. In this study, we investigated the effect of polymer–TA–metal ion(P-TA-M) composite’s effect during the drowning out crystallization of quercetin. When P-TA-M composite is involved in crystallization process, we observed that crystal structure become amorphous and average crystal size reduces to nano scale. If we identify the effect of polymer, tannic acid and metal ion composite on the surface of polyphenol crystal, it may increase the possibility to improve bioavailability of poorly soluble quercetin via hydrogen bonding. |
