Aspartic acid has been known as a detoxifying material of acetaldehyde, which is highly toxic metabolite in the process of alcohol metabolism. There are many different processes to extract the aspartic acid from soybean sprout using various concentrations of ethanol. However, there is no report for the effect of the alcohol concentration on the extraction process as long as we know. In this report we investigated the effect of ethanol concentration in extracting the aspartic acid and fat from the root of soybean sprout and the mechanism of the extraction process. Three different concentrations of commercially available ethanol including 95, 75, and 30 % were utilized in the extraction process. The root of soybean sprout was obtained from Pulmoxan plantation in Yeoju. |
