Tyrosinase, atype III copper containing polyphenol oxidase, is an essential enzymethat involves the synthesis of melanin, dark pigments found in most livingorganisms. The naturalpigmentation is processed from small phenolic molecules, for instance, from oneof the essential amino acids, L-tyrosine, via two different oxidative reactionsof tyrosinase, which are consecutive and inseparable. Previous studies on thisoxidase are mainly focused on inhibitors of the pigmentationreactions for the purpose of skin whitening and prevention of fruit browning.However, not much effort has been exerted to guide how to control this enzymefor developing it as a highly valuable catalyst. In this presentation, the two oxidative reactions oftyrosinase will be discussed, and methodologies for shifting the threedifferent states of tyrosinase and for controlling the inseparable two consecutivetyrosinase reactions will be suggested. |
