This study was performed to evaluate the physicochemical and sensory characteristics of propolis yanggaeng with different ratios of chitooligosaccharide (COS; 0, 1, 2, 3, and 4%). The radical scavenging activity increased noticeably compared with control group which doesn't contain propolis and COS, but the effect of COS concentration on the antioxidant activity was not significant. Increasing the amount of COS in the yanggaeng increased the redness and yellowness, while it decreased the lightness. The pH value and Brix degree tended to decrease as the amount of COS increased. In the sensory evaluation, COS concentration influenced the results and 4% is considered as the best. It got the highest score in color, and generally high score in other evaluations. |
