Polysaccharide is a natural polymer having antioxidant property and it has been used in various areas. Antioxidants are inhibits, free radical reaction which accelerating the ageing process through oxidizing themselves. However, the powerful antioxidants are easily oxidized; in other word they are highly unstable. So the present work is focused to stabilize antioxidants through chemical coupling with polysaccharide using epichlorohydrin as a coupling agent. The attachments of antioxidants to polysaccharide were confirmed by 1H NMR, FTIR and UV-vis spectroscopy. The 2,2-diphenyl-1-picrylhydrazyl scavenging assay of polysaccharide derivatives confirmed the stability of antioxidants through throughout the modification. Some antioxidants have L-3, 4-dihydroxyphenylalanine structure which is mussel adhesive protein mimetic polymer. So we can expect to this structure will improvised the adhesion property. The polysaccharide derivatives also have better solubility in water than raw antioxidants. |
