Mussel adhesive protein has a specific functional group, L-3, 4-dihydroxyphenylalanine(DOPA), and some polyphenols also have the same DOPA structure. This DOPA structure can provide enhanced adhesion property, cross-linking and self-healing behavior. Pectin was chemically conjugated with polyphenols using epichlorohydrin. These modified pectins have the properties of both pectin and polyphenols such as solubility in water, antioxidant activity, adhesion, cross-linking and self-healing. Three cross-linking mechanisms could be achieved through carboxylic acid group, DOPA group, and pH. 1H-NMR, FTIR, and UV-visible spectroscopy confirmed that polyphenols were successfully attached to pectin backbone. Antioxidant activity of modified pectins were measured by 2,2-diphenyl-1-picrylhydrazyl scavenging assay. The adhesion properties of modified pectins were measured in shear and tensile direction. |
