Environmental stress can increase the reactive oxygen species (ROS) level, and accelerate the ageing process. Antioxidants prevent this ageing process by donating their own electron to ROS. Unfortunately, powerful antioxidants tend to easily oxidize themselves. Herein, modified pectins were developed to stabilize antioxidants as protective agents through pre-oxidizing from environmental stress; in other words, they block external stimuli. Pectin and antioxidant were chemically conjugated by epichlorohydrin as the protective agent. Some antioxidants have same functional groups as the specific functional group of mussel adhesive proteins which gives strong adhesive property. This group can provide enhanced adhesion property and self-healing behavior to the modified pectins. 1H-NMR, FT-IR, and UV-visible spectroscopy confirmed that covalent bonding between pectin and antioxidant. The 2,2-diphenyl-1-picrylhydrazyl(DPPH) scavenging tests proved the antioxidant activity of modified pectin. |
