Spent coffee grounds were investigated as a potential source of high-value polyphenols. Polyphenols which have effects on active oxygen scavenging, antiallergic, antibacterial and anti-inflammatory effects still remain in the spent coffee grounds, and when extracted, a large amount of coffee residue can be recycled as resources. Polyphenol extraction was carried out using deep eutectic solvent (DES) composed of a quaternary ammonium salt and a hydrogen-bond donor. In this study, polyphenol was quantitatively analyzed by UV-vis according to the Folin-Ciocalteu reagent method using gallic acid in three process conditions which were solid/liquid ratio, temperature, and extration time. The effects of the respective conditions were analyzed to determine an optimum condition. |
