A water activity control system was developed for lipase-catalyzed esterificationreactions in solvent-free media. Water activity was successfully controlled by sparginghumidified air and dried air properly at a flow rate determined by a digital feedbackcontroller. In this work, modeling and simulation of the computer-aided water activitycontrol system have been carried out with the estimated model parameters. Theexperimental data were in good agreement with model predictions
