The time-temperature indicator(TTI) is attracting great attention as foodborne disease occurs around the world. Current TTIs have developed to include nanoparticles that grow and change color under specific conditions. In this study, we introduced a cost-efficient and eco-friendly TTI systems based on carboxymethyl cellulose(CMC) and silver nanoparticles(AgNPs). When silver precursors are added to CMC, the AgNPs are generated by photoreduction which increases size spontaneously with time along with the visible changes in color from yellow to brown at high temperature. The color change of the AgNPs can be monitored visually and is versatile as an indicator to identify when the material is no longer safe based on the time-temperature exposure history. Our TTI system offers better practicability by the efficient working of CMC and silver nitrate. Furthermore, we believe our system can pioneer in the field of chilled food distribution. |
