Coffee is one of the most popular beverages in the world and spent coffee grounds (SCGs) are being produced all over the world. SCGs were investigated as a potential source of high-value polyphenols. Polyphenols have active oxygen scavenging, antiallergic, antibacterial and anti-inflammatory effects and still substantial amounts remain in SCGs. Therefore, when extracted, a large amount of coffee residues can be recycled as resources. Ethanol is one of the most commonly used solvents as an extractant. In this study, polyphenol extraction was carried out using 30% (v/v) ethanol in water as a solvent. The extracted polyphenol was quantitatively analyzed by UV-vis according to the Folin-Ciocalteu reagent method using gallic acid with three process conditions of solid/liquid ratio, temperature, and extraction time. The effects of the respective conditions were analyzed to determine an optimum condition. |
