Technological parameters of milk depending on the cow housing system, nutrition system, age and number of somatic cells
Milk from the population of 160 cows (2 groups) was studied for contents of dry mass, lactose, fat, protein, casein and no. of microbes as well as for thermostability, pH and setting time. The milk samples with low somatic cell no. (below 400 000) showed the highest applicability for prodn. of hard cheese.
